Dear Phil, Michelle, Andrew and Harriet - it's tough to keep this message short, but your wife, mother, daughter and our sister-in-law has touched us all in many different and special ways. She was truly a wonderful person and we will miss her dearly. Harriett, you raised a beautiful daughter who was loved by all - thank you for bringing her into our world. Phil, you introduced Beth into the Soufleris family and the two of you created your own beautiful Souf's - thank you for such a generous contribution to all of our lives! Michelle and Andrew, I know that you've learned many great things from your Mother that you will no doubt pass on to future generations so thank you in advance! We have all learned from Beth as we watched her take on her greatest life challenge with grace and dignity to the very end. We will of course miss her engaging smile and sense of humor, but - the really great thing is that she touched us all in such special ways that we can cherish our memories of our wonderful times with her - that is what she would want!
